Vinification: Micro fermentation in 5 tones stainless steel tanks with controlled temperature and pumping over system, prolonged contact with the skins for greater extraction of desired compounds.
Ageing Potential: If storage is done properly in certain conditions wine will show its potential in the next few years.
At 16-18C with spaghetti and meatloaf, cheeseburger, Chinese crispy duck, braised short ribs.
Vineyard: 15 years old vineyard from The Vardar River Valley Region – Microlocatinon called Vrshnik. The area of the plantation is with density of 4200 vines per ha cultivated in spur cordonesystem. Yields average around 8000 kg/ha.
Harvest: End of September 2011. The grapes are harvested by hand and placed in 20 kg plastic casks.
